With lower commodity prices, farmers in South Dakota are looking for ways to diversify and add value to their products. That was the focus of Value Added Ag Day at the South Dakota State Fair. Cheri Rath, Executive Director of the Value Added Ag Center says there is a wide range of different products and companies operating in the state.
And she says local food are also providing jobs and fostering rural development in the state.
She says the interest in local foods has also increased the opportunities for farmers markets and turning produce into wine, jams or other products.
She says traditional value added agriculture is also finding new ways to use co-products like whey from cheese making to create new products and revenue streams.
