SDSU Extension Hosting Pork Processing Short Course In September

South Dakota State University Extension is offering a short course in Pork Processing at the Meat Laboratory in Brookings next month. SDSU Extension Meat Science Field Specialist Christina Bakker says the course runs from September 15 through the 17 and will give participants a hands on experience in processing pork.

She says it’ll be a thorough look at processing and safety tips will be given during the short course.

Bakker says part of the reason for them offering this short course came from the pandemic and more people wanting to be able to process their own meat.

Bakker says they’ll talk a lot about food safety during the short course.

The deadline to register is September 3. For more information visit the SDSU Extension Events page. The cost to attend is $800 and that includes lunch for three days, snacks and participants will take home the meat they process.
