May is Beef Month, and Buck Wehrbein is the chairman of the Nebraska Beef Council and says people can be very proud of the quality and quantity of beef produced in the region. He says not only do folks in the area enjoy home-grown beef, but so do others around the world.
Wehrbein says regarding costs, beef producers are working hard to rebuild their herds after bad winter storms and several years of drought. He says rebuilding that herd doesn’t happen overnight. It takes 3 to 4 years from birth before a heifer or steer is ready for slaughter. For those worried about the price at the meat counter, Wehrbein suggests trying less expensive cuts of meat.
He says the University of Nebraska is doing an excellent job at developing new cuts of meat, like the flatiron and beef tender, out of parts of the carcass you typically don’t think of. He says these are great cuts at an affordable price.
