The USDA’s Food Safety and Inspection Service is in the process of modernizing the national egg inspection safety standards. Included in that modernization is the requirement of egg processors to follow Hazard Control and Critical Point Standards and upgrading sanitation procedures. National Association of Egg Farmers President Ken Klippen says his group welcomes the updating of those rules.

Klippen says proper safety is a key for all of America’s egg producers.

He says it’s also positive FSIS is allowing for flexibility in their rule to allow processors to tailer the inspections to their operations.

Klippen says the modernization of this rule is far overdue as the last time they were modified was in 1970.
