Beef it’s what for your New Years holiday meals, but how do select a beef cut and and cook it to perfection? Holly Swee, South Dakota Beef Industry Council Director of Nutrition says first, pick a beef roast from one of the many cuts that comes from the loin or rib section like a tenderloin or strip loin.
Swee says there are many options as well for those on a limited budget.
Cooking is simple, use a roasting pan with a rack, and a meat thermometer to get the desired doneness.
Swee says if you call ahead to your meat department these roasts can be cut to any size and she recommends about six ounces of cooked product per person.
